Obtained from all the olive Groves of Castello di Poppiano, with olives harvested in November and December. It is the typical high quality olive oil of the hills surrounding Florence.
Olive varieties: Frantoio and Moraiolo
Harvest: between November and December
Pressing: immediate processing after harvest (within 24 hours), and strictly cold kneading.
Pairings: ideal dressing for vegetables, pasta-based first courses, grilled meats
