Description

The pride of the Poppiano Castle is Laudemio, a selection obtained, by early harvest, from the olives of the farm’s best olive groves, those of Podere La Costa, with a meticulous production technique, both in the field and in the mill. Its super-quality is guaranteed by the strict “panel test” of the Laudemio Consortium.

Olive varieties: Frantoio

Harvest: in the first half of November to obtain the maximum intensity of ‘fruity’.

Pressing: immediate processing after harvest (within 24 hours), and strictly cold kneading.

Pairings: ideal dressing for vegetables, pasta-based first courses, grilled meats
