Description
Canaiolo Nero is an ancient grape variety with a long tradition in Tuscany.
An ancient document from 1822, preserved in the historical archive of the Castle, written by the factor of the time, spoke of it as one of the most suitable grape varieties for the production of Vin Santo, a sign that already in that period this grape variety with a thick and consistent appearance was already cultivated in the hills surrounding the farm.
Subsequently, Canaiolo, considered a native Tuscan grape variety, was often used as a complementary variety of Chianti to give Sangiovese perfumes, body and pleasantness. In purity, it results in a wine with a strongly typical and territorial character.
The name Canaiolo could derive from the Latin “dies caniculares”, the hottest period of summer (canicola), from the end of July to the end of August, when the grapes change color. Some of the synonyms of this grape variety (Canina, Cagnina, Uva dei Cani) can also make one think of dog rose or dog grass, perhaps for the characteristic bitter note of the wine that is obtained from it.

Food pairing: Pasta with meat sauce, hearty soups and stews. Braised and boiled meats, both white and red, liver and game in general.
