Description
One of the most traditional products of Tuscany, it is a symbol of Tuscan hospitality. Made from Malvasia grapes dried on racks, it is fermented and aged in “caratelli” in the spectacular Vinsantaia of the “Torre Grande” of the Castle, where this dry Vin Santo with a particular bouquet and taste slowly takes shape.
Grape Varieties: Malvasia
Appassimento: Between September and November on racks in the drying room of the Castle.
Fermentation and aging: In “caratelli” of chestnut and oak in the Torre Grande. Maturation and aging in the “caratelli” lasts from 3 to 4 years, until the almost complete fermentation of the residual sugar.
Alcohol content: 17 – 18% Vol.
Tasting notes: Its dry structure, typical of traditional Vin Santo from ancient times, balanced by a delicate sweet note, make it an excellent dessert wine.
